Ingredients

  • 2 (15 ounce) cans hominy
  • 1 cup milk
  • 1 cup shredded sharp Cheddar cheese, divided
  • ½ cup chopped tomato
  • 1 green bell pepper, diced
  • ½ cup water
  • ¼ cup butter
  • 1 jalapeno pepper, diced
  • 1 teaspoon salt

Cooking Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Combine hominy, milk, 1/2 cup Cheddar cheese, tomato, green bell pepper, water, butter, jalapeno pepper, and salt in a heavy skillet. Cook over low heat, stirring occasionally, until cheese and butter have melted, about 5 minutes.
  3. Transfer hominy mixture to an 8-inch baking dish; sprinkle remaining cheese evenly on top.
  4. Bake in the preheated oven until top starts to brown, about 30 minutes.
